The ingredients needed to prepare Handvo:

  1. Take 1 1/2 cup of rice.
  2. Get 1/2 cup of tuar dal.
  3. Get 1/2 cup of moong dal.
  4. You need 1/2 cup of urad dal.
  5. Prepare 1/4 cup of chana dal.
  6. Provide 3 tbsp of curd.
  7. Take 3 of green chilies.
  8. Prepare 7-8 of garlic cloves.
  9. Take 1 inch of ginger.
  10. Provide 4 tbsp of Sesame seeds.
  11. Prepare 3 tbsp of jeera(cumin) seeds.
  12. Provide 2 tbsp of Ajwain (Carom seeds).
  13. You need to taste of Salt.
  14. Use 1/2 cup of Oil.
  15. Get 2 tbsp of saunf( fennel seeds).
  16. Use 1/2 tsp of turmeric powder.
  17. Provide to taste of Red chilli powder.
  18. Provide to taste of Sugar.
  19. Provide 1 pinch of hing/asafoetida.
  20. Provide 1 tsp of curry leaves.
  21. Take 1 of Lauki ( bottle gourd)grated.

Steps to make Handvo:

  1. Soak rice and all the daals for 6 hours.
  2. After 6 hours grind that mix with ginger garlic and chilli.
  3. Add curd to the mixture and leave it covered for 6 hours or overnight.
  4. Now the mixture will be fermented, add some sesame seeds, sauf, jeera, ajwain, salt turmeric powder, half tbsp sugar and red chilli powder and grated Lauki.
  5. Heat a Kadhai with half cup or 7/8 tbsp oil, add mustard seeds, jeera, hing, sauf, curry leaves. Pour the mixture to this and cover it. Cook for 20 minutes, check with a knife if cooked flip it around and cook from the other side for next 15 minutes to make it crispy..
